Street Style Hakka Noodles

Serves 2-3

2 cups noodles 

2 tbsp oil

2 tbsp soy sauce

1 tbsp vinegar

1/2 tsp white pepper powder

1/2 inch chopped ginger

3 cloves of chopped garlic

1/2 red onion thinly sliced

1 cup cabbage thinly sliced

1/2 cup carrots

1 cup bell pepper (green, red and yellow) thinly sliced

2 tbsp spring onions

Cook noodles according to package. Cook it a minute less than the package instructions.

Put the noodles in a cold bowl of water once cooked. This will stop the noodles from over cooking and prevent the noodles from sticking together by removing extra starch.

Heat oil in a wok on a high medium heat. Add ginger and garlic. Sauté until fragrant.

Add red onion and sauté until onions are translucent.

Add cabbage, carrots and bell pepper and cook for 2-3 minutes. 

Add noodles, soy sauce, vinegar and white pepper. Stir until all the ingredients are combined. Cook for 1-2 minutes. 

Taste for salt and adjust with more soy sauce or salt.

Turn off the heat and stir in spring onions. Serve hot!

Notes:

Do not over cook the veggies. They should have a bite to them.
