Indian Railway Omelette
Serves 1
2 eggs
2 tbsp onion, finely chopped
1 tbsp tomato, finely chopped
1/2 tsp green chili, finely chopped
1 tbsp cilantro, finely chopped
1/2 tsp garlic
1/2 tsp cumin seeds
1/2 tsp kashmiri chili
1/4 tsp black pepper, freshly cracked
1/4 tsp garam masala
1-2 tsp ghee or butter
1 tsp oil if using butter
2 slices of rustic white bread
Whisk eggs with salt and black pepper in a bowl and set aside.
Apply butter on one side of the bread and set aside.
Heat ghee or oil in a frying pan on a medium heat.
Add cumin seeds and let it crackle for 5 seconds. Do not burn the seeds.
Add onion, green chili, and garlic. Cook until onion is translucent.
Add tomatoes, Kashmiri chili and mix.
Add the egg mixture to the pan, sprinkle garam masala and cilantro.
Place two slices of bread, butter side up, in the middle and let it soak up the egg mixture.
Swirl the pan until the omelette mixture is cooked underneath.
Carefully flip the omelette over and cook for 1-2 minutes, until the egg is cooked through.
Fold the sides of the omelette in the middle of the bread. Flip one bread on top of the other to create a sandwich.
Cook the bread until golden brown. Cut in half and serve immediately with ketch-up like the Indian Railways!
Notes:
You can also toast the bread slices in a toaster and place the omelette in the between to create the sandwich.
Or add your favorite cheese after flipping the omelette to make a cheese omelette!
