Sooji/Rava Uttapam

1 cup coarse sooji/rava (semolina flour)

2 tbsp rice flour

2 tbsp yogurt

1 cup red onion, finely chopped

1/2 cup of carrots, finely chopped or grated

1/2 cup tomatoes, finely chopped

2 green chilies, finely chopped

2 tbsp cilantro, finely chopped

Oil as required

Salt per taste

Water as needed

Add sooji, rice flour, yogurt and salt in a mixing bowl. Start adding 2 tbsp of water at a time and mix until you have a pancake like batter.

Cover and rest for 30 minutes.

Add the rest of the ingredients (except oil) to the batter and mix well.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour the batter onto the griddle, using approximately 1/4 cup for each uttapam.

Cover with a lid to and cook on one side until golden brown. Apply 1 tsp of on top and flip to cook on the other side.

Brown on both sides and serve hot with coconut chutney.
